Knife Selection

Nov 10, 2024|

The choice of knives mainly depends on the usage scenario, material and design.

Knife selection in different scenarios

Kitchen knives: Kitchen knives mainly include slicing knives, boning knives and fruit knives. Slicing knives are suitable for cutting fresh meat and vegetables, boning knives are used for processing bones, and fruit knives are used for processing fruits. When choosing knives, the material is very important. High-quality knives usually use high-carbon steel or stainless steel, which are hard and wear-resistant and can keep the blade sharp.

Industrial knives: The selection of industrial knives needs to consider the matching degree of processing time, materials and machine tools. The knives with the longest cutting time have the greatest impact on the production cycle, so they need special attention. The choice of knives should match the material being processed. For example, when processing carbon steel, choose optimized design knives, and when processing high-temperature alloys, titanium alloys and other materials, choose the corresponding tool grades.

The impact of tool material on performance

High carbon steel: High hardness, but easy to rust, need good maintenance.

Stainless steel: Not easy to rust, but low hardness.

High-speed steel and cemented carbide: Wear-resistant, corrosion-resistant, suitable for high-intensity processing.

Knife brand and price

Choosing knives from well-known brands usually provides better quality and after-sales service. In terms of price, although a high price does not necessarily mean better quality, a too low price may mean that there are quality problems. Therefore, considering price and quality comprehensively is the key to choosing the right knife.
